First off - Let me say the Beef Stew Recipe from Paula Deen was OUT of this WORLD!! I was hoping to have some to take as leftovers to work but Joey ate all of it! Yea, it was that good!
Now on to this week's plan -
Monday - Kielbasa with onions, bread and salad (Recipe below)
Tuesday - Soup and grilled cheese
Wednesday - Breakfast for Dinner - whipping out the waffle maker we got for Christmas!
Thursday - Homemade Calzones
Friday - Salisbury Steak, Mashed Potatoes, Steamed Carrots
Saturday - Chicken Parmesan, Noodles with Butter, Salad (Recipe below)
Sunday - Chicken and Dumplings, Biscuits
I'm 100% Polish so Kielbasa with Onions is one of my favorite comfort foods.
1 pkg Beef Kielbasa
Vegetable Oil
1 Medium Onion
Slice the Kielbasa in about 4-5 sections and then split those pieces in half. Score the top of each piece 3-4 times. At the same time slice the onion in half and half again. Heat the oil in the skillet and fry up until the kielbasa is slightly browned. Serve all over bread and enjoy!
Chicken Parm
I don't like my Chicken Parm breaded so I go without.
1 Package Chicken Breasts
Balsamic Vinaigrette
Italian Seasoning
Spaghetti Sauce
Mozzarella Cheese
Parmesan Cheese
Provolone Cheese
Preheat oven to 325 degrees. Place Chicken Breasts in pan and pour balsamic vinaigrette over. Then sprinkle with Italian seasoning. Bake until juices run clear. Pour spaghetti sauce over top and then sprinkle with Parmesan, mozzarella, and provolone. Bake until the cheese is slightly browned.
